"Bean to Bar: The Journey of Chocolate" is a 90-minute session exploring how science and art combine to create fine chocolate. Led by Peter W. Carlson of Wright Old School Chocolate, the session covers cacao's history and the stages of chocolate making—from bean to bar.
Participants will learn how processes like roasting, refining, and tempering affect texture, aroma, and taste, and will conclude with a tasting of allergen-free, sustainably sourced Wright Old School Chocolate.
